PDX Vegan Food ideas: Rose City Food Park (+ pride month lewksss)

Happy pride month!! One thing I've been thinking about doing lately is highlighting some of my favorite places around my favorite cities (in this case, Portland) - especially when it comes to good vegan food! I don't know if this type of content would do that well on my Tiktok, so I thought it would be fun to share them here on my blog instead!! One of my favorite places to eat these days is Rose City Food Park, a food truck park on Sandy in Portland, Oregon!!   We've come here for both breakfast and lunch tons of times...

I should come up with other flavors! I use a regular old food processor when I make this, but a vitamix or other high powered...

Crispy fried tofu recipe (Vegan)

I forget, occasionally, that cooking tofu is a thing that people seem to struggle with. A lot of new vegans/vegetarians seem to dislike tofu, which I admittedly don't understand, as I think tofu tastes delicious even with nothing on it. But here's what I do to make it taste even better! Some people would disagree with me here, but I think freezing and then defrosting tofu makes the texture a zillion times better. I stick my tofu in the freezer as soon as I get home from the grocery store, and then pull it out to defrost the morning before...

Recipe: Vegan Pumpkin Cinnamon Rolls (Sugar Free Option)

These cinnamon rolls are not super sweet on their own, but you can add +10 sweetness by glazing them, putting icing on them, or eating them alongside some vanilla ice cream. I don't have a big sweet tooth so I don't bother to glaze mine, and I am also lazy, but there's a fantastic glaze recipes here on Chocolate Covered Katie, or if you know of any other recipe, use that.   Pumpkin Cinnamon Rolls (Sugar Free Option) adapted from here Makes 8 Cinnamon rolls For the rolls: 1 packet dry yeast 3 TBSP Sugar, NuNaturals Stevia Baking Blend, or other...
